TASTING NOTES:
This sake has subtle aromas of green apple, green asparagus, melon, creamy tapioca, and sweet pea flowers. The
palate features fresh pure flavors of melon rind, dried per, cashew, white pepper with an intriguing herbal,
eucalyptus flavor, and finishes with crisp aciditiy.

ABOUT INOUE SEIKICHI CO, LTD:
Hiro Inoue is revered within the Shimotsuke Brewers Association. Inoue’s vision is all about the promotion of the
Tochigi Prefecture; the local water source, hence the brand name Sawahime (River Princess), only using locally
grown rice and only locally produced music is played during the brewing season. Using the local Hitogokochi rice,
the Ginjo style sake is milled beyond requirement to 50%. Fermentations for the Ginjo are done at extremely cold
temperatures for an extended length of time, making this a more elegant sake. Hiro Inoue is known throughout
Japan for his award-winning sake and was awarded Brewer of the Year at the IWC Sake Competition in London in
2010.
