Matsuno Kotobuki Junmai Tochigi 14
Pittsfield TASTING NOTES:
Slightly brassy in color, this sake has a unique, wonderful tropical nose of banana, lychee and mango and a slight
hint of herbaceousness. The locally grown “Tochigi 14” rice gives this rich, dry sake a plum, cucumber and blood
orange element and an intriguing hint of passion fruit.
Digras ABOUT MATSUI SHUZOTEN:
Nestled in a pine forest, this small family owned brewery (1865) uses only local rice for its brewing. The water
source in the small town of Shioyamachi is a soft running creek from the top of the mountain directly behind the
brewery which lends a sense of terroir in the sake. The Toji (brewer), Motohiro Matsui, is also the owner, taking
over from his father, running the company and responsible for all the brewing. Matsui studied at Tokyo University
and is a member of the Shimotsuke Brewers Association. His brewing philosophy and technique underscores the
use of two yeast strains in the brewing, adding complexity to the brew.
